CHICKEN SPINACH SOUP

Chicken Spinach Soup.. YUMMY

45 MINUTE TOTAL PREP TIME

2 Tbls. Extra-Virgin Olive Oil
2 Large White Onion, very thinly sliced.
1 1/2 lbs. Boneless, Skinless Chicken or Turkey Breast. Diced
1 Large Carrot, finely shredded or cut in slices.
2 Large Garlic Cloves, Minced.
1 Jalapeno Pepper with seeds, Minced.
2 tsp. Minced fresh Thyme and/or Oregano. (or 1 tsp. dried thyme/oregano)
8 Cups fat-free natural Chicken Broth. (sodium free if you can find it).
1 (15 oz.) can black beans, drained.
6 packed cups fresh Baby Spinach leaves.
1 Lg. Tomato, finely diced.
Salt and Pepper to taste.

1. Heat Oil in a large stockpot over medium heat.


2. Add Onions, stirring occasionally, for 10 minutes.

3. Add Chicken, stirring occasionally, for 5 minutes more, or until chicken is cooked through and onions are lightly browned.

4. Add Carrot, Garlic, Jalapeno and thyme; cook another 2 minutes.
Stir in Broth and increase heat to high. Bring to a Boil.
Add beans and Tomato. Bring back to a boil. Add Salt and Pepper to taste.
Boil for 5 more minutes. Just before Serving stir in Spinach.

The Finished Product.. !! and it is Yummy...
I used dark red kidney beans instead of Black beans
because that is what I had.. I am going to try it with
Black beans next time because I really like them..

Super Ingredients:

HELPFUL HINT... I COOKED THIS SOUP ON A SATURDAY.. PUT SOME IN THE FRIDGE FOR LUNCH ON SUNDAY, PUT SOME IN FREEZER CONTAINERS FOR DURING THE WEEK.. BART AND I LOVED IT... IT WAS PROBABLY THE BEST SOUP THAT I HAVE EVER MADE.. IT WAS EVEN GOOD COLD...
