45 MINUTE TOTAL PREP TIME
2 Tbls. Extra-Virgin Olive Oil
2 Large White Onion, very thinly sliced.
1 1/2 lbs. Boneless, Skinless Chicken or Turkey Breast. Diced
1 Large Carrot, finely shredded or cut in slices.
2 Large Garlic Cloves, Minced.
1 Jalapeno Pepper with seeds, Minced.
2 tsp. Minced fresh Thyme and/or Oregano. (or 1 tsp. dried thyme/oregano)
8 Cups fat-free natural Chicken Broth. (sodium free if you can find it).
1 (15 oz.) can black beans, drained.
6 packed cups fresh Baby Spinach leaves.
1 Lg. Tomato, finely diced.
Salt and Pepper to taste.
1. Heat Oil in a large stockpot over medium heat.
2. Add Onions, stirring occasionally, for 10 minutes.
Olive Oil: This good fat is a well known belly-fat fighter; also contains oleic acid, recently found to prolong feelings of fullness between meals.
Black Beans: One of the best sources of fiber-- which quells hunger and blocks absorption of some calories. Also contain an antioxidant linked to superior hunger control.
Chicken/Turkey: One of the lowest-calorie sources of protein, the nutrient that stimulates metabolism and turns off hunger better than any other.
Hot Peppers: The chemical that gives this seasoning it's heat has been found to increase metabolism by up to 25%. It also reduces hunger and slashes cravings for bloat-inducing salty foods.
Tomatoes: A great source of vitamin C, which has been found to increase levels of a fat-burning amino acid called carnitine.
Carrots and Spinach: These Super foods help stave off cravings caused by nutrient deficiencies. Plus, studies show that if we eat more low-calorie, high volume foods like these, we'll consume up to 25% less at later meals without even realizing it.
